Soave is er van zeer matig tot groots. De soave van de broers Sandro en Claudio Gini behoort tot de laatste categorie en is een van de allerbeste van de streek. Het geheim van Gini is de beperkte productie, gezonde wijnstokken die soms wel 80 jaar oud zijn en een vakkundige vinificatie. De Contrada Salverenza is gemaakt van 100% garganegadruiven, met de hand geplukt. Bijzonder is dat deze witte wijn ook een melkzuurgisting ondergaat en daarna ongeveer 9 maanden lang op de gistcellen rijpt, in kleine eikenhouten fusten. Het wijnmagazine Perswijn beoordeelde deze witte wijn in een grote vergelijkende soaveproeverij als beste van de streek.

Proefnotitie

Volgeel van tint en complex van aroma, met nuances van rijpe perzik, abrikoos en appel. De evenwichtige, volle droge smaak eindigt met een lange aromatische en frisse afdronk. Rijke wijn.

Drinken bij

Uitstekend bij fijne visschotels, gevogelte of romige pasta.

Houdbaarheid

Op dronk vanaf twee jaar en prima houdbaar tot zeker vier jaar na oogstdatum.
